MEET THE TEAM

The Health & Wellness Committee designs, implements, and monitors events that foster lifelong healthy decisions for BU ASDA members all while promoting a balanced and fulfilling personal and professional life as a student. Skills taught throughout Health and Wellness events apply not only to students but can be used after leaving dental school as well.  ​

you are what you eat try these healthy recipes

Maple Granola

8 cups rolled oats (not instant or quick cooking)
Sliced almonds – 1.5 cup
Pecans (roughly chopped) – 1 cup
2 tsp cinnamon
0.5 tsp salt
3 tbsp egg whites (optional)
0.5 cup maple syrup
0.5 cup safflower oil
2 tsp vanilla extract

Add oats, nuts, cinnamon and salt to a large bowl.  In a separate bowl, combine maple syrup and oil.  Whip egg whites until they become foamyn and then add to wet ingredients.  Add wet ingredients to oat mixture and mix, making sure all the oats are coated with the liquid.  Spread evenly on a baking sheet and bake at 325 for about an hour (until evenly golden brown).  Stir mixture while baking at least twice.  Once finished baking, let granola cool completely before storing in an airtight container.

Note:  This recipe is just a general guideline for granola.  Honey can be substituted for maple syrup (or a combination of the two may be used), and amount added can be varied depending on desired sweetness.  Any type of nut can be added, and dried fruit, dark chocolate, or anything else can be added to granola after baking.

Curried Chickpea, Spinach & Chicken Wraps

2 Boneless/skinless chicken breasts – raw + sliced thin
2   tablespoons olive oil – divided
½   medium onion or 1 small onion
2-3   teaspoons curry powder (or to taste)
1   clove garlic – minced
1   19 oz can chickpeas
1   19 oz can diced tomatoes
5   cups fresh spinach (frozen can also be used)
tortillas/wraps
salt + pepper to taste

1.    Heat 1 tablespoon oil in skillet.
2.    Add chicken and cook until done. Remove chicken from skillet and set aside.
3.    Add remaining oil to skillet. Sauté onion and garlic until almost tender.
4.    Add curry powder and sauté for a couple more minutes.
5.    Rinse and add chickpeas, diced tomatoes, and chicken to pan. Simmer for 6-8 minutes until most of the liquid has evaporated.
6.    Add spinach and cook until done.
7.    Season to taste with salt and pepper.
8.    Place in tortilla shell and wrap. Enjoy!
